Double Cheddar and Smoked Salmon Quiche

1 tbsp olive oil
1 red pepper, diced
1 small onion, diced
6 large eggs
1/2 cup table cream
3/4 cup cherry tomatoes, halved
3/4 cup smoked salmon, chopped
3/4 cup + 2 tbsp Cracker Barrel Double Cheddar Shreds
1 tablespoon fresh parsley, minced
Salt and pepper, to taste

Preheat oven to 375°F. Lightly grease a 9-inch pie pan.

Heat oil in pan over medium heat. Cook onion and red pepper, sauteing until caramelized.

In a large bowl, add eggs; whisk eggs until combined. Add the remaining ingredients, reserving 2 tbsp of cheese. Add salt and pepper to taste, if desired.

Pour quiche filling into the prepared pie pan and sprinkle cheese on top. Bake for 20-25 minutes or until the centre is set. Serve warm or at room temperature.
