Cranberry-Brie Bites

Makes 30-35 pieces.

For cranberry sauce:
2 cups of fresh or frozen cranberries
1 cup white sugar
1 cup water

  1. Bring sugar and water to a boil.
  2. Add cranberries and simmer for 5 minutes till berries pop.
  3. Let cool and refrigerate for future use.

For Cranberry-Brie bites:
1 package of store-bought puff pastry
President Brie
Prepared cranberry sauce
Rosemary sprigs
1 egg

  1. Preheat oven to 400°F.
  2. Line a cookie sheet with parchment paper.
  3. Open puff pastry sheets.
  4. In a small bowl, whisk egg.
  5. Using a pastry brush, brush egg wash on one piece of dough.
  6. Place second piece on top.
  7. Using a knife, cut 1 inch squares.
  8. Place pieces on prepared cookie sheet.
  9. Bake in the preheated oven for 10 to 15 minutes, until golden brown.
  10. Meanwhile, cut thin, square slices of Brie.
  11. Remove cooked puff pastry from oven, and arrange Brie slices on top.
  12. Place back in the oven for a few minutes till Brie starts to melt.
  13. Remove from oven.
  14. Top each bite with a little cranberry sauce and garnish with rosemary sprigs.
  15. Place on a serving platter and enjoy!
