Makes 30-35 pieces.
For cranberry sauce:
2 cups of fresh or frozen cranberries
1 cup white sugar
1 cup water
- Bring sugar and water to a boil.
- Add cranberries and simmer for 5 minutes till berries pop.
- Let cool and refrigerate for future use.
For Cranberry-Brie bites:
1 package of store-bought puff pastry
President Brie
Prepared cranberry sauce
Rosemary sprigs
1 egg
- Preheat oven to 400°F.
- Line a cookie sheet with parchment paper.
- Open puff pastry sheets.
- In a small bowl, whisk egg.
- Using a pastry brush, brush egg wash on one piece of dough.
- Place second piece on top.
- Using a knife, cut 1 inch squares.
- Place pieces on prepared cookie sheet.
- Bake in the preheated oven for 10 to 15 minutes, until golden brown.
- Meanwhile, cut thin, square slices of Brie.
- Remove cooked puff pastry from oven, and arrange Brie slices on top.
- Place back in the oven for a few minutes till Brie starts to melt.
- Remove from oven.
- Top each bite with a little cranberry sauce and garnish with rosemary sprigs.
- Place on a serving platter and enjoy!
